Ingredients
- ¼ cup extra virgin olive oil
- 1 tbsp red wine vinegar
- 1 tbsp lemon juice
- Salt and pepper, to taste
- 1 (14 oz) can artichokes, drained and quartered
- 1 (8.5 oz) can lima beans, drained
- 3 green onions, cleaned and chopped
- 2 tomatoes, diced
Directions
- In a salad bowl, mix olive oil, red wine vinegar, lemon juice, salt, and pepper.
- Add the artichokes, lima beans, green onions, and tomatoes.
- Toss vegetables to coat with the dressing and serve.
