Spring Artichoke and Bean Salad

Serves: 2–4

Ingredients

  • ¼ cup extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • Salt and pepper, to taste
  • 1 (14 oz) can artichokes, drained and quartered
  • 1 (8.5 oz) can lima beans, drained
  • 3 green onions, cleaned and chopped
  • 2 tomatoes, diced

Directions

  1. In a salad bowl, mix olive oil, red wine vinegar, lemon juice, salt, and pepper.
  2. Add the artichokes, lima beans, green onions, and tomatoes.
  3. Toss vegetables to coat with the dressing and serve.
